肉沫粉絲食譜 Minced Pork Pepper with Fried Vermincilli Recipe


This is another easy and delicious Chinese recipe from my brother-in-law. Vegetarians can substitute minced pork with dried tofu.You should serve this dish with steamed rice.

Serve: 4/ Prep time: 10 mins/ Cooking time: 15 mins

Ingredients:

200g minced pork/ chopped dried tofu

1/2 green pepper, chopped 

1/2 sweet red pepper, chopped 

1 bunch Vermincilli

2 tbsp garlic, minced

2 tbsp ginger, minced

2 tbsp shallot, chopped

1/2 tbsp red chili paste

1 tbsp soy bean paste

1/2 tbsp light soy sauce

200cc chicken stock 

1 tsp sugar

Some white pepper

Some chopped scallion

Marinade:

1 tbsp wine

1 tbsp light soy sauce

1 tbsp sesame oil

Method:

1)Add hot chicken stock and Vermincilli in a bowl and soak until soft

2) Marinade the minced pork with wine, soy sauce and sesame oil for 10 minutes

3) Heat up the wok and add 2 tbsp of sesame oil. Fry the garlic, ginger, and shallot until aromatic.

4) Add minced pork to the wok and fry until brown. Then add red and green pepper, fry for a minute and dish out

5) Add Vermincilli and chicken stock in the wok. Add soy bean paste, red chilli paste, soy sauce, sugar, and white pepper to blend with the Vermincilli 

6) Return the pork and pepper into the wok and fry until the chicken stock got really thick

7) Dish out and garnish with scallion. Serve!
