Thai Pineapple Fried Rice Recipe


I got this recipe from my sister-in-law. It is an easy and tasty. Vegetarians can substitute shrimps by using dried tofu. 

Serving:2/ Prep time: 15 mins/ Cook time:5 mins

Ingredients:

2 tbsp butter

2 cloves garlic, minced

1 tsp shrimp paste

4 oz shrimp, shelled and deveined/ chicken/ dried tofu

4 slices bacon

8 oz leftover, overnight steamed rice

4 oz fresh pineapple, cut into small cubes

1/2 red or green chili 

1 tbsp fish sauce

1/4 dark soy sauce 

2 tbsp curry powder

1 tbsp turmeric powder

2 tbsp cashew nuts

Some Cilantro, chopped for garnishing

Method:

1) Heat up the pan, add butter

2) Fry the garlic, shrimp paste until aromatic

3) Add shrimp/chicken/tofu and bacon until half cooked

4) Add rice, pineapple, chili and fry

5) Add fish sauce, dark soy sauce, turmeric powder, curry powder to blend with rice

6) Add cashew nuts and fried for a while. 

7) Dish out and garnish with cilantro. Serve!
